Ribs are SO much better when you remove the membrane from the underside of the bones. Nothing gets under the membrane on a rack of ribs like a plastic shrimp peeler. Once it's under, keep turning it downward as you work your way through. Once you get all the way through, push the peeler completely through to the other side. Grab the membrane with a paper towel, and it usually all comes off in one piece. Quick, easy and clean!
