Grandma's recipe # 5: Deep-Fried Chicken Wings (炸雞翼)

Ingredient:

10 Chicken wings雞翼10隻
1 Egg雞蛋一顆
A pack of all purpose seasoned flour炸雞粉1包
2 tbsp of soy sauce生抽2湯匙
1 tbsp of sesame oil麻油1湯匙
1 tsp of Shao Xing cooking wine紹興酒1茶匙
1 tsp of white pepper powder白胡椒粉1茶匙

Rinse the chicken wings, then marinate them with soy sauce, sesame oil, Shao Xing cooking wine, and white pepper powder.
將雞翼洗乾淨後,用醬油、麻油、紹興酒和白胡椒粉醃製。

Seal the marinated chicken wings in a container with plastic wrap, keep them in a fridge overnight.
用保鮮膜將裝雞翼的容器封好,然後放入冰箱內醃製到隔日。

On the next day, crack an egg onto the chicken wings, add the all-purpose seasoned flour and mix them well so that the surface of every chicken wings is perfectly coated with the mixture of egg and seasoned flour, set aside for 30 minutes.
到了隔天,在雞翼上打入一顆雞蛋,然後將炸雞粉倒在其上,將所有東西用手攪拌,至到雞翼上均勻的裹上炸雞粉與蛋液,然後再醃製多三十分鐘。

Heat the oil in a large skillet with high heat, then coat the chicken wings with all-purpose seasoned flour again before frying them in the oil.
開大火將油燒熱,然後在將雞翼入鍋油炸前再裹上炸雞粉多一遍。

Deep fry the chicken wings for 6 minutes until they turn crispy-brown, then remove them from the skillet and drain on paper towel.
將雞翼小心放入鍋,油炸六分鐘至金黃色,然後把雞翼撈出,放在吸油紙上。
