Cooking Gumbo

It required all day, but the results were more than satisfactory. Below are the photos and ingredients. a1drjohnthumb.JPG

Step 1. Melt butter or bacon fat and sweat the chopped onions over high heat.

Step 2. Add cubed pork, andouille, fresh italian sausage, and chorizo to the pot. Continue to stir over high heat.

Step 3. After the sausage is browned, add cubed chicken.

Step 4. After the chicken is cooked, add diced vegetables. I used bell pepper, celery, and green onion.

Step 5. After several minutes still stirring over high heat, add 1 can of roasted diced tomatoes, creole spice and gumbo file.

Step 6. Add chicken broth sufficient to cover everything. Stir, reduce heat to low, cover and simmer.

Continue to simmer stirring occasionally.

30-45 minutes before serving, add uncooked rice. I also added 1 can of Great Northern beans.

Stir occasionally until the rice is done.

I served myself a good portion in a bowl with toasted bread for dipping.

Fresh Italian sausage...
Could have tried this amazing delicacy but probably won't find fresher Italian sausage in Nigeria. 😊😊
