MINESTRONE (Variety of Vegetables) MY OWN VERSION (vegetable soup)

I LIKE THIS KIND OF SOUP/ STEWED VEGETABLES/ : VERY EASY TO DO!

You Need: Onion (chopped)
Tomatoe Sauce (canned or fresh)
Carrot (Diced)
Few stalks of Celery (Diced)
Cannellini Beans (canned)
Green Leafy Vegetable ( I used Kale)- chopped
1 Tablespoon Olive Oil
Water (adjust according to your soup consistency)
Salt and pepper to taste

Procedure:
Saute chopped onion till translucent.
Then add carrots. Let simmer for 2 minutes.
Add in diced celery. Stir then add tomatoe sauce.
Simmer again for 2 minutes.
This time, the mixture will be ready for the chopped green vegetable
Add Cannellini beans , then add water.
Simmer for another 30 minutes. Lid on.
Then add salt and pepper to taste.

                     Serves hot with toasted bread or beef patties

                               Serves 4 persons
