Cacao madness

How cocoa is produced on Java (I visited East Java a week ago with a team of javanese healers):

1st stage after picking up - seeds fermentation. It is made in these tanks with control of temperature and moisture.

Smell....well, resembles bread yeast, beer malt, not chocolate at all.

what inside a seed:
there are two sorts: purple and white inside Edel and Bulk.

Then is dried by the sun. ultraviolet stops fermentation process

And it's already edible! Field of pure cocoa!
