Super Easy, Healthy, Paleo Sang Choi Bow Recipe

I'd like to share with you all my amazingly simple, healthy Sang Choi Bow Recipe. I love cooking this, you don't need much time or effort. I didn't even follow a recipe when I made this, I just winged it! All the equipment you need is just a good chopping knife and a big fry pan. Ok here goes -

Ingredients:

1 Table Spoon Ghee
500g Chicken Mince
500g Pork Mince
1 Zucchini
1 Carrot
1 Red Capsicum
1 Red Chilli
3 Garlic Cloves
1 Knob of Ginger
2 spring Onions
1/4 Cup Toasted Pine Nuts
1 Table Spoon Seseme Oil
3 Table Spoons Oyster Sauce
2 Table Spoons Tamari
1 Table Spoon Coconut Aminos
Lettuce for serving

Method:

Heat the ghee in the pan, brown chicken and pork mince together.
Blitz the Garlic, Chilli and Ginger together. Add to mince. Cook for a couple of min.
Add chopped spring onion and cook for another couple of min.
Finely chop the veggies then add these to the mix.
Add pine nuts, add sauces (oyster sauce, tamari, sesame oil and coconut aminos).
Give it a good stir and you're done! Easy. Spoon into some lettuce cups and ENJOY!
