Today, I am sharing you one of my best love by many of my friends, The Pumpkin Soup Receipe
A super simple and easy to make but also SUPER HEALTHY too
If you are not familiar with Pumpkin, this is also called squash (not the game squash okay)
But before I will share the receipe, let me share first the goodness of Pumpkin, the meat, and the seed
Back in my country, my grandma always tell me to eat pumpkin as a vegetables with some long beans - blend together.
As it contains (Grandma said so) the following:
beta carotene
calcium
Vitamin A
Vitamin C
Calcium
Iron
Magnesium
**As I grow older I learn even further, that I have to eat pumpkin in keeping my eyes healthier and providing me the other nutrients I need such as the magnesium. Magnesium is important for me to protect from muscle pain after workout
Yet on top of banana and spinach, I still take tablet magnesium.
As for the pumpkin seed
It is a pretty good snacks.
Many health care company, make pumpkin into table or capsule form as it is super nutrietious.
For me, I will just dry the pumpkin seed that was taken out from my pumpkin meat using sunlight.
GREAT SNACKS WHILE WATCHING TV
** NOW, LET ME SHOW YOU HOW I MAKE MY FAVORITE PUMPKIN THAT MY FRIENDS CANNOT RESIST NOT HAVING**
THIS IS WHAT YOU NEED
- Can be half or whole pumpkin head - select the organic and older ones as it is sweet compare to young ones.
select the one which is heavy and dark in color just like the one I have in this image
Maybe one stalk of a carrot just to give a sweet taste.
Some onion, garlic and ginger ( if you do not like any of this, you do not have to have it.
WHAT TO DO
Prepare a decent size pot for your ingredients.
Cut into small pieces all ingredients.
Into your pot, drop some oil that you may like. I prefer Virgin coconut oil This oil will give you that good smelling scent as you toast all the ingredients into the pot.
I Bring the ingredients to a slightly brown in color. (DON'T BURN IN)
Add some vegetable broth into it or if you prefer, just water
Bring it to a boil until it becomes tender
Once tender, I relax it a little to cool down.
**I then use my food processor or a blender to make it into a PUMPKIN PUREE
I like serving it into a white bowl as the color contrast each other.
I sometimes add flowers or some leaves onto the serving bowl, to look it more appetizing.
TIPS:
You can make more in one go, so that you can keep it into the freezer. At anytime you need a soup, think of a
