Hi steemit friends,

I made this easy pickled daikon yesterday and it is super delicious today! It s a perfect side dish for noodle or rice... I had it two times today:)

Ingredients needed

1 long daikon radish
Fresh garlic and 1 inch ginger
4 fresh chili
1 carrot
1 tbp salt
60g brown sugar
1/2 cup light soysauce
1/2 cup apple cider vinegar
1 tsp peppercorn

Methods

Skin the daikon and carrot, cut it into thin pieces, add salt and a lot sugar , leave it sit for at least 2 hours to pull out moisture.(it helps the texture,so no short cuts

Use a small pan, add in half cup soysauce,60g brown sugar,vinegar and cooking wine to bring it to boil. When sugar dissolved, add in garlic chili ginger.. let it cool

Squeeze excess water out of daikon and carrot, add cooled sauce mixture in. Leave it overnight and you can serve it with any main dishes!

It s can be stored in fridge for weeks! But it never last long in my fridge :)
