Mini Breakfast Casserole For Two - Broccoli, Corn & Egg

Have you ever had one of those days where you’re hungry for an awesome home-cooked meal, but have absolutely nothing in your fridge? And no matter how many times you open and close that refrigerator door, nothing new appears? Your torn between just breaking out a cup o’ noodle or going to the store to buy more ingredients. Let me tell you, I have these days quite often. That’s how this unique dish came about. Basically, I gathered up whatever ingredients I did have on hand and whipped them all together into a hearty casserole. And surprisingly, the result was rather wonderful.

​I originally made this recipe as a full-sized casserole, but I have since downsized it to a mini casserole that’s just enough for my husband and I to enjoy. I used a small, round casserole dish similar to this CorningWare French Dish that you can find on Amazon. If you prefer a full-sized casserole, feel free to double or triple the ingredients list.

I must admit, there was a lot of trial and error when it came to this recipe. I finally found the perfect balance of ingredients not too long ago. The trick is to make sure the ratio of creamed corn and egg is slightly more than the amount of broccoli. Also, don’t bake on too low a setting. If your oven bakes somewhat unevenly like mine does, make sure to increase the degrees a little to ensure the casserole bakes quickly enough. For me, 350 degrees seams to do the trick. I found that it’s hard to overcook or burn this dish, so it’s okay to leave it in the oven for a little longer if you think it’s not quite baked all the way through.

Now, I always say that breakfast is good at any time of the day, so don’t limit yourself to just morning for this meal! Even if you’re looking for a quick and fulfilling dinner with minimal ingredients, this is the recipe for you. Bonus: this casserole is great left over as well. It doesn’t get soggy and you can microwave it the next day for the same great texture and taste. Give it a try, I’m curious to hear what everyone’s results will be! 🥦 🌽 🥚
