SPINACH AND CREAM CHEESE STUFFED CHICKEN BREASTS

The combo of mozzarella, cream cheese, spinach and garlic mixing with the savory juices of the cooked chicken breast makes for an unbelievably satisfying flavor! I chose to fry the chicken this time around to keep it simple, but I feel like baking the chicken would work just as well.

This is an idea I have been toying with for a while. I always seem to have extra cream cheese in my fridge and I’ve seen so many yummy recipes filled with it. I definitely wanted to try one out myself and I have to say I was glad I did!

INGREDIENTS

  • 3 chicken breasts
  • 1 Tbs olive oil
  • 8 oz package of cream cheese
  • 2.5 oz fresh spinach
  • ½ cup shredded mozzarella cheese
  • 1 cup chopped chives
  • 1 Tbs crushed garlic
  • ¼ tsp pepper
  • ½ tsp garlic salt
  • ¼ tsp cayenne pepper
  • ¼ tsp paprika

DIRECTIONS

  1. Place chicken in a plastic bag. Use a rolling pin or meat mallet to beat the chicken flatter
  2. You’ll want to do a “butterfly cut” on your chicken. To do so, hold the chicken flat with the palm of your hand and slice into one side of the breast. Make sure not to cut all the way through (I cut slightly more than halfway through). You can go further depending on how thick and big your chicken breast is
  3. Place olive oil in a large skillet and heat on medium for a couple of minutes
  4. While oil is heating, sprinkle each side of chicken with some garlic salt and pepper
  5. Place the chicken breasts in the skillet
  6. Fry EACH SIDE of the chicken breasts uncovered for about 10 minutes or until golden brown
  7. While chicken is frying, place the cream cheese, spinach, mozzarella, chives, garlic, pepper, salt, cayenne pepper and paprika in a large, microwavable bowl
  8. Microwave for about 1 minute, then remove and stir until well combined
  9. Once chicken is browned on both sides, remove from heat to start stuffing
  10. Stuff each chicken breast with about 3 tablespoons of the cream cheese mixture
  11. Return the chicken breasts to the skillet and fry for an additional 10 minutes on low heat. You can cover the skillet at this point to ensure everything cooks through and the cream cheese mixture is heated properly
  12. You might have some cream cheese mixture left over so feel free to heat it up and offer to anyone who wants a little more on their serving!
