The caviar is made from the eggs of sturgeon fish and is an exquisite recent food from less than a century ago, very rare and of a high price. But it is not the same as white caviar since it is much more exclusive, it is made with the eggs of snails of the Helix Aspersa MΓ‘xima species.

Raising snails is not an easy task, because only half of them survive the extraction of their eggs and if that were not enough, they need a lot of snails to make a single kilo of white caviar. Although white caviar is not as popular as black caviar, it has a higher price thanks to its hard work compared to the first.
