When I was a little girl my family used to make this dish for dinner quiet often since it was very affordable and tasty, but it was not very healthy. It was loaded with sugar, butter and white rice. I really wanted to introduce this dish to my family, but if we were going to enjoy it as a meal, I need it to make it more nutritional. This my entry in the @woman-onthe-wing competition because when I think of apples I almost instantly picture this bake.
Cook brown rice, I used 2,5 cups ( left overs I use for salad, but it really depends how many people you cooking for ). The good thing about this dish is that you can make use of any old apples that start to become soft. Cut them in quarters, remove the seeds and grate ( I leave the skins on but you can peel it ), then cook the apples on a little bit of coconut oil with 2 teaspoons of cinnamon and dash of maple syrup ( the amount would depend on how sweet your apples were ), ones soft remove from the heat and cool slightly.
Spray the heatproof dish with some coconut oil and lay a layer of brown rice on the bottom following with a layer of apples and cover with rice again. To top up pour some maple syrup on the top and sprinkle some pepitas. Bake for 30 minutes in 180C and can be served with some Greek vanilla yogurt.
