1- Use wood
Wood is the only fuel that gives the food a real taste. If the type of barbecue allows you, place the complete pieces of wood in it. If your barbecue is normal, place smaller pieces of wood between the coals (of course, charcoal should also be cooked)
2- Keep the meat cool
You do not need to heat the temperature of the meat before grilling, because it does not make any difference at the time of cooking. In restaurants, for reasons like comfort and hygiene, the meat is kept frozen as before before baking.
3- Separate pieces of meat
Fill the pieces of meat regularly and accurately when grilling. This will help you to know which pieces are earlier on the barbecue, so that you can rotate them in time or remove them from the barbecue.
4- Rotate each piece only once
It is not necessary to return pieces of meat every 10 seconds. Just turn them 90 ° after two minutes after you put it on the heat.
5- Use sufficient spice before grilling
The use of salt makes the pieces of meat taste delicious when cooked. Before grilling the meat, sprinkle enough salt and black pepper.

1.از چوب استفاده کنید
چوب تنها سوختی است که به غذا طعم واقعی می بخشد. اگر نوع کباب پزتان اجازه می دهد، قطعات کامل چوب را در آن قرار دهید. اگر کباب پزتان معمولی است، تکه های کوچکتر چوب را بین زغال ها قرار دهید (البته زغال هم باید زغال چوب باشد)
2.گوشت را سرد نگه دارید
هیچ نیازی نیست دمای گوشت را قبل از گریل شدن به دمای اتاق برسانید چون این کار هیچ تفاوتی در زمان پخت به وجود نمی آورد. در رستوران ها هم بنا به دلایلی چون راحتی و بهداشت، گوشت تا قبل از پخت به همان صورت منجمد نگهداری می شود.
3. تکه های گوشت را مرتب بچینید
تکه های گوشت را هنگام گریل شدن به طور مرتب و دقیق بچینید. این کار به شما کمک می کند تا بدانید کدام قطعه زودتر روی کباب پز قرار داده اید و به این ترتیب به موقع آنها را بچرخانید یا از کباب پز خارج کنید.
4. هر تکه را فقط یک بار بچرخانید
لازم نیست هر 10 ثانیه یک بار تکه های گوشت را برگردانید. کافی است آنها را دو دقیقه بعد از اینکه روی حرارت قرار دادید، 90 درجه بچرخانید.
5. قبل از گریل کردن از ادویه کافی استفاده کنید
استفاده از نمک باعث می شود تکه های گوشت در حین طبخ خوش طعم و ترد شوند. قبل از اینکه گوشت ها را گریل کنید، مقدار کافی نمک و فلفل سیاه روی آن بپاشید.
