Cooking in less than 15 minutes: Huevos Rancheros Soft Tacos

Hi my dear friends,
We are all busy and do not have time to cook often. I am thinking to put some fast cooking recipes here. As you noticed, I always bring the reference and I like to respect to the right of authors. I appreciate if you respect too.

Today's recipe: Baleadas, a street food in Honduras, inspired these handheld, filled tortillas.

Authentic baleadas use quesillo cheese, which can be hard to find; use Oaxaca
cheese as a substitute.

Prep: 6 minutes • Cook: 2 minutes

2 large eggs
2 large egg whites
1/8 teaspoon freshly ground black pepper
Cooking spray
1/2 cup fat-free refried black beans, warmed
2 (6-inch) flour tortillas, warmed
1/2 cup (2 ounces) shredded Oaxaca cheese
1/4 cup fresh salsa
1/4 cup diced peeled avocado

  1. Combine first 3 ingredients in a small bowl, stirring with a whisk. Heat a medium
    skillet over medium heat. Coat pan with cooking spray. Add egg mixture; cook 1 minute
    or until soft-scrambled, stirring often.
  2. Spread 1/4 cup beans over each tortilla; top evenly with scrambled egg mixture, and
    sprinkle evenly with cheese. Spoon salsa and avocado evenly over eggs. Fold tortillas over
    filling. Yield: 2 servings (serving size: 1 taco).
