Harira - Moroccan Soup Recipe - Cooking

The Traditional Moroccan Harira Soup

The ingredients
2 lbs of ripe tomatoes
1bunch of celery
1 bunch of cilantro
1 bunch of parsley
2 large onions of 3 medium ones
1 cup of soaked oven night and peeled garbanzo beans
2 tbsp of tomato paste
1 tbs of aged butter
2 tbsp of salt
1/2 tsp of black pepper
1 tbsp of ground ginger
1 tbs of turmeric
1/2 cup of olive oil
About 12 cup of cold water
1 cup of white flour
1/2 cup of short angel hair paste

How to
Make a cross cut on the tomatoes and drop them in a pot filled with cold water, place over medium heat for ten minutes. Remove the tomatoes from the water, once cool enough, peel off the skin. Chop the tomatoes finely, then chop finely the onions, and the celery.
In a deep pot add the olive oil, the meat, the chopped tomatoes, the chopped celery, the chopped onions, the skinned garbanzo, the salt, pepper, ginger, turmeric, and the water. Mix and cover the pot. let the mixture cook for 45 min.
Meanwhile chop the parsley and the cilantro very finely.
After the 45 min had passed, open the pot, after a quick stir, add in the chopped cilantro and parsley, and the tomato paste mixed in half a cup of water, the aged butter, and and place back on the stove top till it comes back to a boil.
In a bowl add the flour and about 3 cup of water or till a runny mixture is formed, whisk well till lump free.
Once the pot comes to a boil pour in the flour mixture slowly while stirring, add in the pasta Continue to stir for an other five minutes. Cover the pot and cook for 15 more minutes on very low heat.
After the 15 min the Harira soup is ready.
