Spicy Mustard Coleslaw

I have been making some great varieties of coleslaw.

My favorite is a spicy mustard blend! The dressing is made with mustard, lemon, cilantro, apple cider vinegar, chopped garlic, black pepper, and pink Himalayan salt.

Easy Process:

  1. Combine chopped a head of cabbage, one onion, and one cup carrot in a large bowl. Chop up 1-2 cups of cilantro (parsley can be used also). An added twist is to cut up and then add a fresh crisp apple and one cup chopped celery.

  2. Combine vinegar, spicy mustard, lemon, salt, black pepper, and dash of red pepper in a small bowl; stir well with a whisk.

  3. Add the mustard mixture to cabbage mixture, and toss well to coat. Cover and chill for 20 minutes.

You may top with any of these before serving:

  • chopped cucumber
  • chopped water cress
  • chopped broccoli or cauliflower
  • chopped raw cashews or walnuts
  • dried cranberries
  • chia seeds, flax seeds, sunflower seeds

~ Cabbage is an excellent source of vitamin K, vitamin C and vitamin B6. It is also a great source of manganese, dietary fiber, potassium, vitamin B1, folate and copper. Additionally, cabbage is a good source of choline, phosphorus, vitamin B2, magnesium, calcium, selenium, iron, pantothenic acid, protein and niacin.

~ Health benefits of cabbage include frequent use as a treatment for constipation, stomach ulcers, headaches, obesity, skin and eye disorders, eczema, gout, jaundice, scurvy, rheumatism, arthritis, heart diseases, aging, and Alzheimer’s disease.
