My dear foodies,

Today I bring you an exquisite recipe that will whet your appetite immediately, any food that takes guacamole must be delicious, this is a rice salad with guacamole, which will provide us with enough protein, fat and carbohydrate to balance our plate.

This dish is special for those who do not have time to cook, I offer a simple and practical solution in a single dish. This way you will save time and you will be able to dedicate it to other things in the house.

My secrets INGREDIENTS

(for 4 portions):

For the vinaigrette:

♡ 3 tablespoons extra virgin olive oil

♡ 2 tablespoons lemon juice

♡ 1/2 teaspoon Tabasco

♡ 1/2 teaspoon salt

♡ 3 tablespoons chopped red and green peppers

♡ 3 tablespoons chopped onion

♡ 3 tablespoons chopped parsley

For the salad:

♡ 1 cup Boiled rice

♡ 2 diced Small tomatoes

♡ 1 Avocado Chopped

♡ 4 leaves Chopped lettuce

♡ 10 or 12 Black or green olives

♡ 100 g Tofu

PREPARATION

Preparation time: 10min

Cooking time: 10min

Total: 20min

The first thing we will do is to choose a bowl where we will mix the ingredients of our vinaigrette very well, I recommend to put first the olive oil and then the lemon juice and then we incorporate the rest of the ingredients.

Next and in another bowl that we will choose, (it must be bigger) this will be in that finally we serve the finished plate, here we will put the rest of the ingredient as the tomato chopped in very fine pieces like the avocado, we will chop also the lettuce and the olives if they are pitted, if they have pits you will have to remove it before incorporating it to the preparation, finally, we will chop the tofu in pieces.

Then mix everything we have in the bowl until all the ingredients are well incorporated, it will be the right time to place our vinaigrette mixture, continue mixing until the vinaigrette reaches every corner of the dish.

And ready, we can serve to start eating.

This salad you can eat as a single dish does not need to accompany it with anything else, although I leave you to your discretion if you want to add another outline to accompany it, we are free to decide.

@flamingirl, Beautiful salad, I love all of the ingredients, I would use riced cauliflower instead of rice for my paleo diet.

Information are finely delivered and it look so yummy.
I am using lemon here in Saudi Arabia but in Philippines it is so expensive.
