Rainbow Hawaiian Sweet Bread - Coconut and Pineapple Bread

Ingredients
2 1/2 tbsp active dry yeast
1 cup coconut milk (divided into 2 parts)
1/2 cup brown sugar
1/4 cup granulated sugar
10 tbsp unsalted butter
1 tsp salt
1 large egg
1 tsp vanilla extract
3/4 cup crushed pineapple
1/4 cup powder milk
5 - 6 cup bread or all-purpose flour

Instructions:

  1. In a standing mixer combine 2 1/2 tbsp yeast, 1 tbsp sugar , and 1/2 cup warm coconut milk (105F to 110F). Mix and let it sit for about 5 minutes until its bubbly.
  2. While waiting for yeast, in a medium microwave safe bowl mix 1/2 cup coconut milk, butter, white and brown sugar, powder milk, salt and microwave for about 1 minute.
  3. Lightly whisk in egg and vanilla extract to the butter mixture . If butter mixture is too hot let it cool to warm before adding egg and vanilla.
  4. When yeast mixture is bubbly add in butter mixture and pineapple. Mix on medium speed.
  5. Then add about 3 cups of flour and mix. Continue mixing and adding small amount of flour. Stop adding flour when dough doesn't stick to the side or bottom of the bowl when kneading.
  6. Turn dough in a lightly flour area and knead for about 1 minute. Place dough in a lightly oiled bowl. Turn the dough in the bowl to coat dough with oil. Cover with towel and place in a warm, draft free place to rise. Let rise till double in size. About 1-2 hour.
  7. Turn dough on lightly floured surface. Flatten and divide to 6 equal pieces.
  8. Add food color and knead the food coloring into the dough. Add more food color as needed. It will take some time so be patient.(start with light color or wash hands between each color to prevent mixing colors). Always cover dough when not working with dough to prevent it from going hard.
  9. Roll out each colored dough on a lightly floured surface and stack them on top each other.
  10. Roll up dough tightly from the short end into a loaf. Place loaf in a lightly greased loaf pan. ( You should be able to make 2 loaves).
  11. Cover with a towel and let rise until doubled. (Place it in a warm, dark and draft free area for about 1-2 hour)
  12. Bake at 375 degrees for about 25 - 30 minutes.
