Red Velvet Cake Mix Cinnamon Rolls
Just in time for Christmas day brunch...Makes about 20 to 24 rolls
Ingredients:
Rolls:
▪ 1 box of Red Velvet Cake Mix
▪ 4 1/2 tsp of Active Dry Yeast
▪ 2 1/2 cup warm water
▪ 1 tsp of kosher salt
▪ 1 tsp vanilla extract
▪ 5 cups of all-purpose flour
Cinnamon Filling:
• 1 stick softened butter - 2 if you want the really gooey
• 1 cup brown sugar
• 1cup sugar
• 1/4 cup cinnamon
Cream Cheese Frosting:
• 2 stick of softened butter
• 2 cups powdered sugar
• 1 tsp vanilla extract
• 2 8oz softened cream cheese
Combine active dry yeast with warm water in the bowl of a stand mixer. Stir until dissolved. Add cake mix, flour, vanilla, and salt. Use dough hook attachment to knead dough for about 1 to 2 minutes. Transfer to a bigger bowl and let rise for about 1 hour. (I just left it in the mixer bowl). Punch dough down after an hour.
Use a lot of flour on a clean surface and turn dough out. Shape into a ball and roll into a rectangle shape, mine measured about 30x20. Spread butter and sprinkle with cinnamon sugar mixture. Start from farthest edge and roll dough tightly into a log shape. Slice into 20 - 24 rolls, depending how big you want your rolls.
Place rolls into two 9x13 pans greased pan. Let rise for another 1 hour or until double in size
Bake at 350 degrees for about 15 to 20 minutes.
For cream cheese frosting, combine softened butter and cream cheese. Beat until well combined, then add vanilla. Then add powdered sugar 1/2 cup at a time and mixed well.
Spread on warm rolls and enjoy..
