Being born in NYC and raised in the suburbs my whole life, we really know our bagels! A few places make them really good around here. I finally decided to jump in and give it a try. I found this recipe online and gave it a shot, using a bread machine which makes it really worthwhile. This is the machine I have and love it: http://amzn.to/2xthHQS
I made this recipe for the first time and literally ate 3 bagels right after they were done! They were sooooo good! They are SO inexpensive to make, even when using premium ingredients!
Ingredients
1 cup warm water (110 degrees F/45 degrees C)
1 1/2 teaspoons salt
2 tablespoons white sugar
3 cups bread flour. Bobs Red Mill is awesome: http://amzn.to/2ykUWg4
2 1/4 teaspoons active dry yeast
3 quarts boiling water
3 tablespoons white sugar
1 tablespoon cornmeal
1 egg
3 tablespoons poppy seeds or sesame seeds, minced onion, large grain sea salt, a mix of all for "everything" or even leave plain!
Directions
Place water, salt, sugar, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting.
When cycle is complete, let dough rest on a lightly floured surface. Meanwhile, in a large pot bring 3 quarts of water to a boil. Stir in 3 tablespoons of sugar.
Cut dough into 9 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with your thumb. Twirl the dough on your finger or thumb to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 10 minutes.
Sprinkle an ungreased baking sheet with cornmeal. Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through.
Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with egg, and sprinkle with your choice of toppings.
Bake in a preheated 375 degree F (190 degrees C) oven for 20 to 25 minutes, until well browned.
They will be soft and chewy on the inside, and nice and crispy on the outside. They are oh so good you will not believe it! If you never had a real good New York Bagel the way they are supposed to taste, you HAVE to make this recipe.
Let me know what you think and how you like it! I suggest finding the best butter like KerryGold, Finlandia, or even make some yourself in your blender. It's easy!
I'll have to try that recipe out. It looks good. Thanks for sharing!
