Today's Sustainable Feast in the Garden of Eden

It is another great day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our full time volunteers today on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

Today we made a marvelous frittata feast! 



We started our meal with an über dank salad! We topped our garden fresh mixed greens with red onions, sliced pears, chopped pecans, and crumbled roquefort cheese! It was extra tasty with a splash of our cheery homemade cherry vinegar



Cooking over the wood burning stove is extra cozy! It feels fantastic to have a fire providing warmth and light in our home. We enjoy being together, especially around the wood burning stove in the wintertime. 



One of our sweetest helpers brightened and warmed our space almost as much as the fire just by being his cutey cute self.



We prepared a side dish of flavorful quinoa with garlic, onions, and peppers. Quinoa tastes and looks like a grain, but it is actually a protein-packed seed! It is a very delicious, satisfying, and nutritious substitute to grains, which is great because many people have grain-sensitivities or allergies given the conditions of modern agriculture in which they are grown. 



We made another flavorful and nutrient packed side dish of lightly sautéed spinach with artichoke hearts, crumbled feta cheese, and slivered almonds. Spinach and artichoke is a classic pairing, and the salty, tangy feta adds a great texture and extra flavor to the veggies.



We made two kinds of fantastic frittatas today, utilizing lots of the leftover bits of delicious meals past we had in the fridge! Using up leftovers was the motivation behind tonight's epic feast. 

We had a single serving of yesterday's incredible Mexican "lasagna" left over, so mixing it into a frittata with beans, cheese, and farm fresh eggs was an easy solution for sharing one piece between all of us! (We're going to share the easy recipe for the Mexican lasagna soon!)



For our second frittata, we mixed leftover tortellini in pesto with chicken sausages and even more cheese with our scrambled eggs, and cooked it gently over the fire in a big cast iron skillet. 



We love frittatas! They are very delicious and never have to be made exactly the same way twice. We are going to share the mouthgasmic food formulas for today's epic frittatas in an upcoming post! 



It was another epic spread with plenty of food for everyone! 



We like to serve extra sauces and condiments with each meal so everyone can fully customize their own servings. We put out spicy tomato salsa, sour cream, and chopped green onions for garnish today.



What an incredible feast shared in great company! We are enjoying upgrades and changes every day in our community, and our daily feasts are a great opportunity to come together, reflect, plan, and give thanks for this amazing life together. 

What's even more epic than any of these wonderful dishes is the fact that we give away tens of thousands of high vibe meals like this as and provide thousands of boxes of groceries to hungry people every year. This sustainable life is incredibly satisfying!

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!

Frittatas again, I like it. The green onions on top are a good touch.

I was in my yard today and noticed that I still have a few green onions in my garden. It got cold quickly back in the fall, and I forgot to clean all of them out. Now I still have fresh green onions that survived the snow! I'll bet they're even better than normal ones! :)

Yes we love frittatas! These were the best ones we've had this week, especially the one with a bit of Mexican lasagna in it :)

We find that greens and herbs sometimes do better when the weather drops - they get crisper and sweeter. Not really sure how they might do in or after a snow if it was actually below freezing temperatures...we don't get much snow around here! Enjoy them <3

I was surprised at how well they're doing on their own. They had at least 3 inches of snow on them at one point and they're still going strong. Maybe I accidentally created a new strain. heh. Yeah, I could imagine TX not getting much snow. The sun's good for the greenhouses though. :)

On seeing these delicacies, I had to just drink water, hoping to digest what I've seen.
