Mouthgasmic Food Formulas: RAW Vegan Cauliflower "CousCous"

We are grateful for the opportunity to share food here in the Garden of Eden!


One way we do that is by giving away free food every single day, and we extend the offer to you too because we are here to help one and all: if you or anyone you know wants or needs food, contact us - we will give you free food, no questions asked. 

Another way we do that is by preparing daily feasts for our full time volunteers and having communal meals together. We also share by posting these sustainable feasts on the blockchain every day!

Today, we offer a formula for a fresh, easy, delicious, nutritious, RAW CAULIFLOWER "COUSCOUS"!


Prep time: 30 minutes
Cook time: 0 minutes
Makes about 20 1/2 cup servings

Ingredients:

1 head cauliflower
1 yellow bell pepper
1 red bell pepper
1 zucchini
1 onion
2 cups chopped mushrooms
1 bunches green onions
5-7 medium cloves garlic
1 lemon
1/4 cup liquid aminos
1/4 cup olive oil
1/2 tsp Himalayan salt
1 lemon
Optional: sprinkle of red pepper flakes or hot sauce, or grated ginger & sesame oil for Asian flare

Method:

Cut the cauliflower into about 1.5 inch chunks and place them in the food processor. Working in batches, fill the food processor only up to about the level of the top of the blade center piece, or about 2.5 inches high. 


Pulse the food processor in 1 second bursts until your cauliflower is the desired size/ texture. Sunflower seed-sized chunks are nice, which requires about a dozen pulses. Repeat this step until all the cauliflower has been "riced".


Chop all the veggies small, about 1/4 inch pieces. Finely mince the garlic. Mix them in with the cauliflower in a large bowl. 


Add salt, pepper, hot sauce, etc. to your liking. 


Garnish to your preference and enjoy!

Can please you explain your process of salvaging over 175 tons of trash from landfills - or direct me to a post on this if you have one from the past? Beyond impressive. Want to learn more.

There are a lot of elements of it. For one, we do all of our cooking outdoors over rocket stoves that burn discarded fence panels for fuel. We get these from a friend who has a fencing company - instead of having to actually pay money to drop them off at the landfill, he donates them to us and we alchemize them into free meals! For two, we salvage all kinds of material in perfectly good condition, like pallets & tires, and repurpose them in our sustainable building projects. For three, we get "trash" cardboard to throw down in our garden, and we cover it with mulch to break down and enrich the soil. Those are just a few things, but it really quickly adds up!
