Soup of dried porcini mushrooms with flour

Mushrooms contain very little cholesterol and do not cause hunger for a long time.

Ingredients


  • 60 g of dried porcini mushrooms;
  • 1,500 ml of water;
  • 450 g of fresh porcini mushrooms;
  • 1 large onion;
  • 1 small bunch of dill;
  • 4 tablespoons of butter;
  • 900 ml of mushroom or chicken broth ;
  • 240 g sour cream;
  • 3 tablespoons of flour;
  • salt and pepper to taste.

Cooking



Put the dried mushrooms in a bowl and soak for 4 hours in hot water. Then filter the liquid through gauze or a fine sieve. Rinse mushrooms under running water. Throw it in a colander.

Cut fresh mushrooms into large pieces, onions - medium. Chop the dill.

In a saucepan, heat the oil over medium heat. For 5-7 minutes, brown the onion. Throw in fresh mushrooms and cook another 15 minutes. Stir constantly.

Pour the frying broth and bring to a boil over low heat. Add strained liquid and soaked mushrooms. Cover and cook for 30–45 minutes.

Beat sour cream with flour so that there are no lumps left. Pour 200 ml of broth from the pot with soup into the mixture and make the mass homogeneous.

Constantly stirring, slowly pour sour cream and flour sauce into the pan. Cook another 5 minutes on low heat. Salt, pepper and add dill.
