Deconstructed Tricolore Salad

This dish I made as a starter for a 4 course Tomato inspired dinner.

Ingredients

Mozzarella
Avocado
Philidelphia cream cheese
a few drops of fresh lemon juice
Tomatoes
Garlic
Basil
Olive Oil extra virgin
salt & pepper
Pinenuts
Balsamic reduction

How to...
get the balsamic reducing in a pan
get the pine nuts toasting slowly on another pan
remove peel and seeds from tomatoes( boil, ice bath )
blend the avocado with cream cheese and garlic to a fine smooth mousse
blend basel leaves with garlic olive oils salt and pepper

Plate
Place a slice of your fresh mozzarella
fill half a tomato with the Avocado mousse and place it resting on the mozzarella
garnish with your dressings, fresh basel leaves and sprinkle the toasted pine nuts ... easy and yummy
