Classic Turkish-style steak tartar, better known as çiğ köfte (CHEE' kuf-TAY'), is made with very high quality, fat-free beef that is minced and kneaded together with fine bulgur, pepper, tomato paste, onion, garlic, and a mixture of Turkish spices.

5 large ripe tomatoes2 cups fine bulgur2 medium onions5 garlic cloves2 slices stale bread1 cup walnut halves1/2 cup olive oil1/2 cup pomegranate concentrate1/4 cup Turkish isot biber1 tablespoon tomato paste1 tablespoon red pepper paste1 teaspoon cumin1 teaspoon saltGarnish: Finely chopped fresh parsley and green onion

Interesting. Never thought about a vegan version of it. Never was a fan of the original when I ate meat.
