Hey Steemians!! Happy Saturday to ALL! For all that are freaked out about BTC in the past two days, number one, welcome to the land of BTC, and then secondly, chill out and enjoy looking at some great comfort food.

Today I am sharing my version of corn nuggets. My guess is that this is something unheard of in most of the world but is common in the Southern United States. Anything dipped in fat and fried in fat is popular in the United States.

I made this as a special request and I was really happy with how they turned out.

I am also very happy with the photos. There are just some foods that you cannot look good in a photo, ask me how I know this. Before taking photos, I was almost certain this would be one of those food photo shoots that would not turn out.

I turned 70 yesterday. I suppose I should do the obligatory "look at me" post, but I just haven't found the inspiration. What do you think, should I do the 'obligatory' post? So far I can report that rep score doesn't mean what it used to. Back in the old days, as in back in November, those with 70 or higher next to their name were getting great vote counts. That's not the case today. But, that's the evolution of Steemit. So, I will continue running this race as the slow but steady tortoise, I guess.

My recent posts have been mostly about good party food. It's playoff season in the states and down here in Chile it is summer which means vacaciones and fiestas. An interesting side note: Almost all, and I mean almost ALL of Chile takes vacation time in either this month or in the month of February. So, pretty much everywhere is short staffeded these two months. It's hard to get stuff done, let me tell you.

One of these days, one of my posts is going to go viral. This is me telling you right now that you're welcome to help make this one THE one, how about it, you up for it?

RECIPE

Ingredients

3 cups corn, separated
1/2 cup cream
1/2 cup milk
1 tablespoon butter
1 tablespoon flour
1 tablespoon sugar
salt & pepper to taste
2 chipotle chiles in adobo, finely chopped, and 2 - 3 teaspoons of adobo sauce (or to taste)
1/2 cup shredded cheddar cheese

For the Batter:
3/4 cup cornmeal
3/4 cup flour
2 eggs
1/3 cup milk
2 tablespoons sugar
salt and pepper to taste
oil for frying (about 3 cups)

Instructions

  1. Combine 1 1/2 cups corn with cream, milk, butter, flour, and sugar in medium saucepan. Add chipotles and adobo sauce to taste and season with salt and pepper. Bring to a boil over medium heat, stirring constantly until thickened. Remove from heat and stir in cheddar until melted. Stir in second 1 1/2 cups corn. Allow mixture to cool for about 15 minutes.
  2. Line a baking sheet with parchment and drop tablespoon sized piles of filling on tray. Freeze for at least 4 hours or until solid enough to dip in batter.
  3. When filling is frozen stir together ingredients for batter. Heat oil in medium skillet or deep fryer to about 350 degrees F (180 C). Remove fillings from freezer. Dip one at a time into batter and drop into oil. Cook on each side for 1 to 2 minutes until golden brown If they are cooking too quickly reduce heat a little or the outside will be done while the center will remain frozen. Fry in small batches and remove to a plate lined with paper towel to absorb excess oil.
  4. Serve hot!

Mission accomplished making them look tasty, these would go perfect with some chili con carne, I would probably have to workout for a good 2-3 hours before jumping into this one, and I would add extra cheese as always. Another noteworthy experiment turned successful creation. Upvoted for originality

Mmmm!! Looking so awesome ! and you know i just bought myself a 2 basket deep fryer for christmas ! first time i ever owned one , so this would be a great recipe for me to try out in it ! I bet those would be good at a bbq with ribs ! mmmm ! thanks for shareing ! πŸ˜‹πŸ˜™πŸ˜š
