Peanut Butter Banana Protein Pancakes (FOOD PHOTO SHOOT)

Hey guys, anyone want pancakes for breakfast?

Or lunch, or dinner, or even (my favorite) pancakes for dessert! I’m the type of person who doesn’t discriminate foods based on what mealtime category they fall into. I’ll mix and match what I like and eat any kind of food anytime of day. In fact, as I’m typing out this post I’m thinking about how good veggies sound for breakfast so I’ll probably go for something savory this morning. But pancakes, now pancakes are definitely a great example of a food that works well anytime of the day.

Also, I know I know I’ve emphasized my peanut butter affair over and over, but it’s been legit recently. All time high obsession! You get the point. Now for these pancakes I was focused on the protein aspect so the pancakes themselves actually have powdered peanut butter in them to give them their nutter-buttery-ness (<- I’m going to copyright this term, YES!)

I also used one of my favorite short-cuts and added some of the Kodiak cakes Protein waffle mix (you can buy it online) that I love using. By the way, I’m not being sponsored I just genuinely like it. The ingredients are pretty basic and I love the flavor it adds, however if you can’t get a hold of it where you live or you just prefer making these from scratch let me know and I’ll give you a version completely from scratch. Oh, and these are pretty easy to turn vegan if that fits your needs better.

Alright, and now we get into the toppings! Does anyone else get overwhelmed if they let their creativity run wild in this kind of thing? Maybe that’s just me. It’s just that there are endless possibilities! Some kind of nut butter is a no-brainer of course, and then you can add any kind of fruit, nuts, syrups, granola, chocolate, and then top it off with yogurt or whipped cream. The pictured pancakes were topped with some peanut butter, banana, vanilla greek yogurt, and a quick sauce of some extra powdered peanut butter for good measure.
Most of the time though, I’ll go straight for the berries and double or triple up the yogurt on the side, in a bowl, with some granola on top. Haha, so basically my favorite way to eat pancakes in reality looks like $#%*, but it tastes amazing! That’s what counts, right?

No matter how or when you like your pancakes, these are probably my favorites right now, but I won’t sit around trying to convince you all day. Peanut Butter Banana Protein Pancakes


Prep Time: 15 minutes
Cook Time: 5 minutes ~~ Yield: 1 serving
Total Time: 20 minutes ~~ Serving Size: 1 recipe

Ingredients

1/2 large banana (65g), mashed
2 tablespoons powdered peanut butter
30g (1/3 cup) Kodiak cakes Protein waffle mix
1/2 teaspoon baking powder
3 tablespoons unsweetened almond milk
46g egg whites (3 tbsp or 1 white)
pinch of sea salt
1 - 2 teaspoons of stevia (or sweetner of choice, sugar, honey, agave) to taste

Instructions

Whisk together the egg whites, mashed banana, and almond milk in a small mixing bowl. In a separate bowl, mix the dry ingredients, salt, baking powder, sweetener, pb powder, and pancake mix..
Combine the wet with the dry and whisk until you have a nicely thick pancake batter. Heat a non-stick skillet over medium high heat and grease with oil if desired.
Pour the batter into desired size pancakes and cook for 1 - 2 minutes per side. Remove and top with any desired toppings and enjoy!

Hay Caramba! You remind me of what a foodie I am at heart. Another mouth watering post. I may just have to get out of my room and find something similar at the market down the road. Do you have an all time favorite desert dish that you make, or are known for by your loved ones? I used do a super rich banana bread, and also apple pie. When I had my house in Florida I think I spent more time in my kitchen than in my bedroom. I don't think I told you but I was personal chef for a very wealthy family in NY for 6 months. I taught myself proper cooking by downloading every Jamie Oliver video watching them 3 times over taking notes for two years while I was teaching English in Korea. So I really know quality food when I see it and I see it all over your blog! Thanks for sharing! -Dan

No all good. I know how this place can take up a lot of time. Appreciation is equally shown in a quick up-vote too especially when you're carrying SP like you have. Thanks for your comments. I learned at young age, I can't do just one thing, I get bored and depressed. For me the spice of life is learning and experiencing all I can. Yes teaching English in South America is crap for earning money. Korea, Hong Kong, Japan, Shenzen China, and Now Vietnam pays quite well. The reason I left the private chef gig, is they underpaid me and treated me like a slave including demanding that I clean their toilets as part of the gig. Was ridiculous. I went back to Korea and started up my private lesson business again. That's where the money is at! No need to reply, I'm not offended, you are busy and I have to head down the coast of the Gulf of Thailand to Pattaya this afternoon. Have great day as well!

Hello @gringalicious. I always make pancakes at home for my kids but had always eat it only with maple syrup. Loving that easy but best match... peanut butter and banana. Haha, well I'm not sure if you can tell the scale of these by the photos but they are actually a very realistic portion and the nutrition facts are really good. As for the toppings I added, they were very healthy too.
If pb isn't your thing feel free to try maple syrup or whatever you like @stadex!

I LOVE peanut butter and bananas on my pancakes! I put bananas in the mix before but never tried peanut butter in as well. The whole protein concept as eluded me so far but I'm getting closer to trying it.

It's more the smell for me. I blame my dad for that. He used to make peanut butter sandwiches with so much PB on them that it would make the whole house smell of it. Ugh. Always happy to support you @gringalicious. :)

great idea when you are trying to gin weight , but i am losing weight right now, but the photos are amazing. I live a very active life style you can tell form my post, and at times i need this kind of energy food

Hey my friend, it's been a little while, but I am never surprised at how amazing your food presentations are and I am a peanut butter fanatic. From the size of that fork in comparison to those pancakes, I would definitely need like a ridiculously exaggerated 6 plates, qualifying for gluttony lol jk

Before the fork came into view, I thought this stack of pancakes was HUUUGE. Once the fork arrived on the scene, I realized that this is the perfect compact stack for one hungry gal (or guy). Peanut butter and bananas are meant to be together. Putting them with pancakes...well I won't argue with ya!

That looks like I could go a whole day without eating after eating it. It's nutritious, it's delicious, it's nuttery-buttery, what's not to like? I would be hard-pressed not to eat the whole thing in one sitting!
