First, vacuum seal the steak and age for 29 days. Don't worry! It won't rot as the vacuum takes the air out. The steak becomes extremely tender and yummy! Take out of vacuum package and rinse off in water and pat dry. Season and cook!
You can age just for 3-7 days...it'll still be yummy!
