Couscous cutlets with kale --> vegan / vegetarian friendly

Hello:),

today I'd like to share with you a recipe for tasty couscous cutlets with kale. I prepare it quite often as it's pretty fast to make and tastes delicious:). And, what's the most important, it's really healthy and nutritious.

What we need:

  • 3/4 cup of couscous
  • 2 or 3 cups of chopped kale
  • 1 chopped onion
  • 1 spoon of linseed (can be replaced by 1 egg)
  • 1 teaspoon of cumin (can be replaced by a bit of soy sauce)
  • 1/2 teaspoon of paprika powder
  • coconut oil, pink salt, pepper

How to prepare:

  • mix couscous with boiling water and allow it to sit for a few minutes

  • fry chopped onion and kale

  • stew for a while

  • mix everything and add spices

  • form into a shape of a cutlet (with wet hands)

  • fry on a bit of coconut oil

Cutlets can be served with your favourite salads or cooked / steamed veggies.
