Salmon with homemade teriyaki glaze and tomato salad over jasmine rice.

Salmon is one of my all time favorite fish to eat. Although I must admit than as a kid I did not care for it. I thought it was too fishy. That is why I like to always revisit ingredients now that I am older. Our tastes change over the years. This recipe is incredibly simple and very healthy.

Ingredients:
2 tbsp sesame seeds (optional)
1/2 cup teriyaki glaze to marinade and to paint the salmon.
6 mint leaves
2 tomatoes
1 sprig rosemary
1/2 of a red onion
1/2 a lime
1 lb of salmon cut in half or quarters
Salt to taste for the salad
2 tbsp olive oil

Teriyaki Glaze/Marinade
1/4 cup soy sauce
1/4 cup sesame oil
4 cloves of garlic
1 inch piece of ginger peeled
4 tbsp of honey
Put all ingredients in a blender and blend thoroughly.

Put the teriyaki glaze on salmon and set aside while you chop up your veggies for your salad.

Dice your veggies real small to about 4 millimeter pieces so they distribute well in each bite and blend all the flavors well together. Add the olive oil and line juice and mix everything well and put in fridge. Put 1 cup of rice to 1 cup of water in a rice cooker. If no Rice cooker in a pot 2 cups of water to 1 cup of rice.

Stick the Salmon in the oven at 400 degrees and take it out in 10 minutes, brush it one more time with the glaze and add sesame seeds and cook for another 5 minutes.

Should look like this when done. You can break off a piece to see if its done.
