Baked Barramundi, sauteed mushrooms with goat cheese, and cucumber

We bought some frozen Barramundi at Costco and have been pleasantly surprised with the quality. Tonight I baked it in olive oil with pepper, salt, and garlic, and drizzled lemon juice on after it came out of the oven. Quite tasty and low carb too!

Cool. Pity it was frozen but you have no choice.
Where I am in Darwin Australia, we catch "Barra" locally - great fresh fish!
The Tourist Commission even run a competition this time of the year where you can catch a Million Dollar Barramundi - check this out - http://www.milliondollarfish.com.au/

I like to get fresh fish when I can. I really just enjoy seafood in general and like to eat it regularly, so it is definitely more affordable to get frozen if I want to have it more than once every couple of weeks. I certainly would love to be catching it fresh with you down there! That's such a neat competition they run, and quite the prize being offered. Hopefully I will get to fish in Australia one day, I guess I should add it to my bucket list. Thanks for looking!

dinner was delicious! thanks for thinking of me and making me an AIP compliant version.

Thank you sweetness, I'm glad you liked it and I'm happy to make you AIP compliant versions of everything everrrr

That’s making me crave some fish and some bomb chardoney to go with it. 🤤
