Cooking With Rhoda - The Stuffing

Last night I shared the turkey glaze recipe that Mo makes every year. Tonight we made the stuffing and sweet potato casserole. The best part of it was all the amazing smells!



The Stuffing Stuff

8 cups Hawaiian Bread cubed and toasted
2 cups chicken broth
1 cup dried cranberries
1 cup celery chopped
1 onion chopped
1 red bell pepper chopped
2 granny smith apples peeled/cored/chopped
Cinnamon
1 can cream of celery soup
3 eggs beaten
salt
pepper
1/4 cup butter



In a small bowl, soak the 1 cup of dried cranberries in the 2 cups of chicken broth for 20-30 minutes.



In a large pan, melt the 1/4 cup of butter, and over medium-high heat, sautee the onion, pepper, and celery until tender.



Add the apples and cook for another 5-6 minutes. When done, transfer the mixture to a large bowl. Pour in the cranberries/chicken brother mixture, cinnamon, and add in the can of cream of celery soup.


Mix until combined, then add the cubed and toasted Hawaiian bread. Add in the 3 beaten eggs. Stir until bread is mixed in well


Spoon into a baking pan and bake on 350 for 40 minutes, or until center is set.


Voila. Cranberry Apple Stuffing.
