Shrimp Tempura

I like to try shrimp tempura at different restaurants. The coating should be flaky and light with the shrimp cooked to perfection, not rubbery and overcooked. At this restaurant, the coating was well done but the shrimps were just a tad overcooked. The saving grace was the miso soup and shirasu. Shirasu are little white fish made of baby sardines. You rarely get them as an appetizer in Hawaii. Both the soup and shirasu were excellent. All in all a good shrimp tempura dinner.
