Mandarin and Cinnamon Cupcakes (Gluten free, dairy free, Paleo, Natural sugars only)

I spent my afternoon being creative in the kitchen today. I did attempt to video the process but that was an epic fail. I got some nice shots though.

I love creating new recipes and trying new flavours. I had some fresh mandarins given to me and really wanted to make something sweet out of them. They turned out to be pretty tasty for a new recipe.
So here is my recipes. Mandarin and Cinnamon Cupcakes.

Ingredients

• 1 Cup Coconut Flour
• 1 Tsp Baking Powder
• ½ Tsp Salt
• 1 Tsp ground Cinnamon
• 8 Eggs (at room temperature)
• ½ Cup Honey
• ½ Cup Coconut Cream
• ½ Cup Olive Oil
• 1 Tbsp Maple Syrup
• 1 Cup Mandarin (blended)
• Rind from 2 Mandarins

Method

  1. Pre-heat oven at 150°C. Place cupcake papers in cupcake tray.
  2. Sift Coconut Flour, Baking Powder, Salt, and Cinnamon. Set aside
  3. Lightly whisk eggs. Then add Honey, Coconut Cream, Olive Oil, Maple Syrup, and Mandarin.
  4. Beat with electric mixer until completely combined.
  5. Add dry ingredients. Beat on medium to high until completely combined.
  6. Pour mixture into prepared muffin tray
  7. Bake for 30 minutes. Allow to cool in cupcake tray. Serve.
