Today I’d like to share one of my favorite Philiphino food; adobo, but maybe with some added vegatables as a twist. Adobo; which means a type of sauce or seasoning is a dish from the Philippine usually consist of condiments and spices or so call a pickling sauce made of vinegar, garlic, soy sauce, and bay leaves that is added to stewing pork or chicken. Although it was a mix culture of the colonization of Spain and its’ concoction that consisted of pork loins cured for weeks in spices, thank goodness for the Philiphinos’s version.
First, let me just say that I’m not a chef, a schooled cook or even know the basic of some cooking but I do know some; very little, cooking to get buy without having to wine and dine...can’t afford to. So, here I go , with a total amateur at cooking, showing you how to make a delicious chicken adobo with a twist.
Here are the ingredients without the obvious; chicken drumsticks. Please feel free to add or subtract any ingredients as you wish because cooking should be fun. It should be flexible and it is working with what you got. Ok, here are ingredients that I picked....
#1: Ingredients:
Whole black peppers, a clove of garlic, 2 bay leaves, diced onion, 1 potato diced, and adobo spice package..,,
With a twist; 1 Thai chili pepper and snow peas...
#2: Cooking:
Sautée garlic, diced onion, and two bay leaves. Let it sweat until almost brown..
In the meantime; crush black peppers coresly. Then add to sauté pan..
#3. Add chicken and diced potato
Now add chicken drumsticks and diced potato into the pan. Let it mix and sauté into the sauce for about five minutes before adding a cup of water. Let everything in the pot comes to a boil before lowering the heat to medium-low for another 30 minutes of cooking.
#4: Finish
Once adobo is finished cooking, add peas and one chili pepper.
Cooking is complete. Make a plate with some steam rice and add adobo! And wouldn't you like to know what are the twist to this dish?! It's no secret; I love black peppers, so it was crushed and added...spicy! I added potato to create a nice thick sauce to top over rice or mashed potatoes, and finally added peas for some veggies that adobo don't usually have. And one hot Thai chili pepper just because I'm a spicy rebel. And that's about it!!
I really hope you've enjoyed my adobo food culture. And I also added peas and a Thai chili pepper to add flavor to what was an ordinary Philipino chicken adobo. IMHO. Please don’t hate me. This is all in real time, so, off I go to dinner and then call it a night.
