Time to try something new: a home-made stuffed pizza like those from Papa Murphy's take-and-bake shops! Instead of making two pizzas on two pans, I made, well, two pizzas on one pan, essentially. They are stacked, with most of the meat and tomato sauce on the bottom crust, and then most of the cheese on the top.
This recipe will be irritatingly non-specific. It works for the large pizza stone I use. Adjust accordingly. Have fun!
Crust
Stir 2 heaping teaspoons of yeast and 1 teaspoon of sugar into 1 cup of warm tap water. Set aside to rise.
Mix 2 cups flour, 1 teaspoon salt, 3 tablespoons of oil, and the yeasty water. Stir together. Knead in approximately 1 cup of flour until it feels right. Sorry I can't be more specific.
Sauce
I mixed a can of tomato sauce, half a can of diced tomatoes, some minced onion, and some Italian seasoning in a saucepan and heated it on the stovetop on low.
Toppings
1 lb. browned Italian sausage
1 package turkey pepperoni
1 package Daiya pepper jack cheese alternative
Assembly
I stretched and rolled half the dough into a crust, spread most of the sauce onto it, and sprinkled the browned sausage over that.
Then I spread most of the pepperonis evenly over the surface. I stretched and rolled a second crust, and draped it over the toppings. I crudely crimped the edges together and rolled them up. I spread the remaining sauce over that and added the rest of the toppings.
I borrowed the baking instructions from Papa Murphy's and baked the whole works at 350°F for 35 minutes.
It turned out better than expected! I have most of it set aside for future work lunches now.
