I never cooked with cucumber. We eat them raw in salads, but to have them in a hot dish is something different.
I guess the trick is to not cook them till they are completely done. The cucumber pieces in the curry were still al dente. Very delicious. The core of the cucumbers has been removed to have only the solid parts remaining.
Look at the photos: overall it was a great curry I tried in our canteen. I like the use of peppers and peanuts. The pepper was really hot. Together with the bell pepper and the other vegetables, it is a great combination.
At home, I would skip the rice and replace it with more vegetables or chicken. Low carb is something I strictly look for. On the other hand, if you eat outside you have to live with what is available. Sometimes you have no choice.
