Hot Dog Casserole

This is one of my favorites. I've spent some time finding a good hotdog chili recipe that's fairly low in carbs, and this is what I came up with. I thought I would miss a good ol' chili dog while changing to a low carb lifestyle, but with this bun-less hotdog casserole recipe I don't miss the sugary bun at all. I hope everyone who tries this enjoys it and please follow my blog and feel free to comment with suggestions!

The Recipe

2 lbs hamburger
1 medium onion *
1 pkg hotdogs*
¼ cup olive oil
4 tsp chili powder
4 tsp onion powder
4 tsp garlic powder
2 tsp salt
1 tsp cumin
½ tsp liquid smoke
2 tsp worcestershire
2 tbsp tomato paste
1 ½ cups shredded cheese

This recipe make about 8-10 servings. You can half it for less if you like. I like to make extra to have leftovers for lunch or dinner the next day. For the cheese feel free to use whatever you like. For this, I used Colby/Jack.

Pre-heat oven to 325 degreess.

Note 1: For the onion, cut in half and finely dice half of it, while chopping the other half into slightly larger cubes. What you want to do is use the finely diced half to saute in olive oil for the chili, and use the other half to top your serving to give it that authentic raw onion crunch and flavor that you get from a traditional chili dog. If you are concerned with carb count, omit the onion and use extra onion powder for flavor.

Note 2: ** I like to use Hillshire Farm mini smoked sausages for their smoky flavor, but feel free to use hotdogs of your choice. Obviously for low carb, check the nutrition labels for carb count.**

After you prep the onion, put the finer diced half in the pot with olive oil and saute till translucent.

Add the hamburger and proceed to brown. When it gets about half way done, add in all other ingredients except for the cheese. Continue to stir all the ingredients occasionally as it cooks.

When you notice the hotdogs beginning to plump, take the mixture off the heat and transfer to a 9x5 inch baking dish.

Top with shredded cheese of your choice, place in the oven and bake for about 10 minutes or until cheese is nice and melted.

I like to top my serving with yellow mustard, and a pinch of raw onion, but it is delicious on it’s own.
