StopDiabetes2 #6 - the diet changes after day three

 The days of green leaves are over, it’s time to add goodies!   


As you move away from glucose-inducing foods, it’s a progressive journey of retraining your tastebuds into discovering other tastes, possibly ones you have not tried before. Also you may have to discover different sources for your food beyond supermarket chilled cabinets and plastic bags of food. Try farm stands, natural food companies   

Go nuts   

Start adding any nuts into your diet, but don’t go nuts… if you get my meaning. (Anybody would think I write for Basil Brush, huh?) Forget brazil nuts for now,  too oily - go for cashews, peanuts, hazelnuts, pecans, pistachios and almonds (but watch the prices on almonds -  they can be expensive).    

Finely chop a mixture and add to a salad. You can also try toasting nuts for added flavour. Put them onto a baking dish and spil under the gril. WARNING! Don’t take your eyes off this process, they can burn real fast. When cool, chop and add to a salad.   

If you can find seasonal fresh nuts in late September/October they are more interesting textures as the freshness gives them a lovely texture with moisture.    

If you’re in France you’ll be able to buy fresh ‘wet’ walnuts at markets and in supermarkets, and if you’re in California you can buy fresh almonds – even buying them by the species online.    

You can get better selections of raw nuts online. Hunt around the websites for "raw nuts buy online" The set back is although they are fresh - you’ll have to buy in bulk, like a pound or kilo at a time… but they should be a cheaper price than buying lots of small packets at a supermarket. 

Some shops that stock ingredients for Indian or Asian cooking will also have bigger bags of nuts at cheaper prices than the litte packets at supermarkets.   

I have been known to eat raw chestnuts as a snack as well as cob nuts… quite honsetly though…  its such a pfaff to crack them, peel them, and then they give your jaw such a work out, you’re exhausted after you’ve ate one of these - let alone two.   Nuts are good for snacking and later on in the diet, I even end up making cakes with them.  Equally nut butters make an appearance later but you have to watch the sugar values in the carbohydrates.   

Get seedy   

Start adding sunflower seeds to salads, as well as pumpkin seeds. An any other seeds you can find to through into a salad or vegetable mix.   

One egg a day   

After three days you need to start adding protein. So one egg a day for the next three days and then two eggs a day if you want after day nine. Can be egg whites and/or yolks.   

If you have one egg with a lot of mushrooms in the morning, then that’s a good breakfast. Some mushrooms can be really meaty especially the portobello variety. Omlettes for lunch, or dinner, packed with finely chopped greens – broccoli, courgettes, can be very filling also.   

Other OK foods   

Radishes, red and white cabbage, spring onions, try balsamic vinegar as a dressing, but only a small amount.   

Still not eating or drinking…. no dairy, no cheese, no yoghurt no milk, no meat, no flour, rice, bread or pastry, no poultry, no sugar or honey, no vegetables grown under the ground, no cereals, no diet sodas… it won’t be always like this, we’re just getting the tubes cleared   

The introduction of oil.   

Having cleared the tubes of the fat and oil that has been left to fester in soft tissues for far too long, the last thing you want to do is clog it all up again. So if you have to introduce oil, say in cooking an omlette – then its rapeseed oil only. Olive oil is too heavy for your system at the moment, so keep it light.  

  

Here’s the hard part, if you do use rapeseed oil, then it has to be the smallest amount you can get away with. If you have a good non-stick pan, then you shouldn’t need oil, but it you do, then make the oil a 3cm-circle or a one-inch circle. No more. Don’t forget that rapeseed oil has a higher flash point than olive oil so it gets hotter faster. You may have to lower the heat using rapeseed oil.   

It can be used also to make a salad dressing, say with chopped garlic and herbs, but again the smallest amount you can get away with. Seriously? Try a teaspoon at the most… yes a teaspoon, not a tablespoon.

I mean to continue passing on to people everything I have learned along the way. Preservatives full of sugar, sugar hidden in meat products and more.

My DNA is not your DNA, and this diet may be wrong for you. Be responsible to yourself if you are anxious and if  need be check the diet out with your medics. I chose not to. I think the NHS guidelines for nutrition are idiotic and I reckon I know when my body says no about something. And if I felt ill then i would have dived into a cheeseburger. But I didn't and I am better for it.
