Roasted butternut is amazing! and the best part is, it requires practically ZERO effort.
I generally dress my half butternut with a little salt, pepper, spice of choice, olive oil, a dollop of butter for extra decadence, a few fresh herbs (generally lemon thyme and a little rosemary), GARLIC - OBVIOUSLY!!! and then... the cherry on the cake... a sprinkling of bean sprouts!
When you roast the butternut, the bean sprouts render into the most fantastically crunchy little delights which compliment the flavour of the butternut like a dream!
I generally roast it open for approx. 45 min at about 200 degrees celcius...
Easy as pie nomness!

I hope you enjoy it. :) Here in South Africa, we are BIG on our "braais" and roasted veg on the open fire is a great favourite! we generally season the veg (whatever it may be) and then we wrap it up in tinfoil and stick it on the fire and voila - deliciousness!
