#WhatsCookingChallenge - Apple & Mint, Lamb Knuckle Stew

Sometimes, it is the simplest dishes which are the most tasty...
and yesterday was no exception.

It was rainy and cold here in Cape Town,
and I was LAZY lol...
so I decided to make something easy!

#WhatsCookingChallenge - Apple & Mint, Lamb Knuckle Stew

Lamb knuckles have got to be one of my absolute favourites,
especially the end of the meal when you get to suck all the marrows
out of the bones.

My son refers to this meal as "sucky bones" hahaha!

So, chop up your onions
and saute them in a little olive oil
along with some garlic.

add the lamb knuckles
and brown them nicely for a few minutes.

Throw in a handful of fresh mint,
a bay leaf or two (if you have),

and then add some thickening stock,

or...

grab a sealable shaker and pour in your
brown onion gravy powder.

I normally use one full pack, which is about 25g

Then add the two heaped tablespoons of flour,
and approx. 500ml of water.

Give it a really good shake,
until the powder and water have combined.

and then pour that mix into the pan.
Give it another good stir, and allow it to heat.
Once it starts to heat, the gravy powder and the flour mixture
will begin to thicken.

Once it thickens, add about 150ml of fresh cream
and then give it one final stir.

Leave that to simmer for a couple of hours
on medium to low heat and then serve with some
thinly sliced fresh apple and a round of basmati.

heheh thank you very much @denmarkguy :) And I comletely agree.... lamb is AMA-ZING!!!

and yes...

We had one day with quite a nice amount of rain and then another with a few drizzles... but it all helps. As for day Zero, that has been pushed now, and I do not think we will see it in 2018 (if ever)... I am somewhat skeptical as to the authenticity of the whole thing anyway....

Looks very delicious ! I didnt know that we could cook with mint. I have never tried that before, but will definitely do in the future. At least to have that experience.

Oh yes @hanen!! Mint is incredibly versatile, and the nice thing is that it grows like a weed! So once you plant it, you will always have plenty! I use mint in SO many dishes!!! It goes wonderfully with chicken too and is also great to cook peas with mint - if you like peas ;)
