This is a super yummy and easy recipe that helps us preserve our summer tomato crops.
Here is our recipe for sun dried tomatoes in olive oil:
Step 1
So the tomatoes are actually dehydrated (because of the pesky summer bugs in our neck of the woods). We dehydrate until the tomatoes are crunchy not rubbery.
Step 2
We individually dip the tomatoes in a white wine vinegar. This helps with preservation. The last time we used a walnut and truffle infused white wine vinegar that tasted amazing. But your favorite white wine vinegar will work.
Step 3
Fill a mason jar with the dried tomatoes and cover with olive oil. Refrigerate for 3 days, then enjoy.
