Mini Italian Meatloaves

I'm a foodie person and love coming up with new recipes. Here's one that uses turkey instead of beef to lighten it up!

Ingredients:

  • 1 lb. ground turkey
  • 1 lg. egg, beaten
  • 1/2 c. milk
  • 1/2 c. quick cooking oats
  • 1/4 c. marinara sauce
  • 1 1/3 c. Italian bread crumbs
  • 1/2 Tbsp. Italian seasoning
  • 2 cloves garlic, minced
  • 12 cubes mozzarella cheese
  • 12 cupcake liners
  • optional - additional marinara sauce
  • optional - additional mozzarella cheese

Ingredients:

  1. Preheat oven to 375 degrees F. Line 12 count muffin tin with cupcake liners. In a large bowl, combine the beaten egg, milk, marinara sauce, uncooked quick cooking oats, ground turkey, Italian seasoning, garlic and bread crumbs.

  2. Divide mixture into twelve equal portions. Insert one cheese cube into center of meat and roll in hands to form the meat around the cheese into a ball. Place into muffin tin in the liners and continue with remaining meat and cheese.

  3. Top with a tablespoon (more or less depending on your preference) and shredded mozzarella cheese.

  4. Bake uncovered on center oven rack for 25 minutes or until done.
