Prime rib on the grill for Christmas

  • dry surface of meat with a paper towel
  • cut pockets and shove whole garlic in the meat
  • cover in salt and cracked pepper
  • wrap in plastic and let sit in refrigerator for 24 hours
  • take out of refrigerator 3 hours before cooking
  • turn grill on high and sear both sides
  • turn burners off. leave one burner on at low and move meat to opposite end of the burner and cook 15 minutes per lb
