- dry surface of meat with a paper towel
- cut pockets and shove whole garlic in the meat
- cover in salt and cracked pepper
- wrap in plastic and let sit in refrigerator for 24 hours
- take out of refrigerator 3 hours before cooking
- turn grill on high and sear both sides
- turn burners off. leave one burner on at low and move meat to opposite end of the burner and cook 15 minutes per lb
