Easy Veggie Samosas

These crispy veggie samosas are the perfect snack or appetizer, packed with a savory blend of spiced potatoes, peas, and aromatic herbs. Easy to make and even easier to enjoy, they offer a delightful crunch with every bite. Perfect for dipping in chutney or enjoying on their own, these samosas will transport your taste buds straight to the streets of India!

– makes about 6 servings –

Ingredients
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon caraway seeds (ajwain)
4 tablespoons vegetable oil
5-6 medium potatoes, boiled and mashed
1 cup green peas, cooked
1 teaspoon cumin seeds
1 tablespoon ginger-garlic paste
1 teaspoon garam masala
½ teaspoon red chili powder
2 tablespoons chopped cilantro
Oil for frying
Water as needed

Steps

  1. In a large bowl, combine flour, salt, caraway seeds, and 2 tablespoons of oil. Mix until crumbly, then gradually add water to form a soft dough. Cover and let it rest for 30 minutes.

  2. In a pan, heat 1 tablespoon oil over medium heat. Add cumin seeds and let them sizzle, then add the ginger-garlic paste. Sauté for a minute.

  3. Add in the mashed potatoes, green peas, garam masala, red chili powder, and cilantro. Mix well and cook for another 3-4 minutes. Remove from heat and let cool.

  4. Divide the dough into small balls. Roll each ball into a circle, cut it in half, and shape each half into a cone, sealing the edge with a bit of water.

  5. Fill the cones with the vegetable mixture, sealing the top edge well. Repeat until all dough and filling are used.

  6. Heat oil in a deep pan over medium heat. Fry the samosas in batches until golden brown and crispy. Drain on paper towels.

  7. Serve hot with your favorite chutney or sauce. Enjoy!
