Ingredients
12 large Medjool dates
4 oz Gorgonzola cheese, crumbled
½ cup walnuts, chopped
2 tbsp honey
1 tsp fresh thyme leaves (optional)
Pinch of black pepper
Sea salt, for sprinkling
Steps
Preheat your oven to 350°F (175°C).
Carefully slice each date lengthwise, ensuring you don’t cut all the way through. Remove pits if necessary.
In a mixing bowl, combine crumbled Gorgonzola cheese, chopped walnuts, honey, thyme leaves, and black pepper. Mix well to create a paste.
Stuff each date generously with the Gorgonzola-walnut mixture.
Place the stuffed dates on a baking sheet lined with parchment paper.
Lightly sprinkle each with a pinch of sea salt.
Bake in the preheated oven for about 10-12 minutes or until warmed through and the cheese is slightly melty.
Remove from the oven and let cool for a few minutes before serving.
