扬州炒饭,又名扬州蛋炒饭,是江苏扬州经典的美食。主要食材有米饭、火腿、鸡蛋、虾仁等。腹胀、尿失禁患者忌食。
Yangzhou fried rice, also known as Yangzhou fried egg rice, is a classic delicacy in Yangzhou, Jiangsu Province. The main ingredients are rice, ham, egg, shrimp, etc. Patients with abdominal distension and urinary incontinence should not eat.
扬州炒饭选料严谨、制作精细、加工讲究,而且注重配色。炒制完成后,颗粒分明、粒粒松散、软硬有度、色彩调和、光泽饱满、配料多样、鲜嫩滑爽、香糯可口。

家庭炒制做法还是很简单的。颜色饱满,齿颊留香,所谓颗颗金抱银,粒粒银抱金,调料除了盐,无它物,是我爱的淮扬味。

鸡蛋3-4个
水发海参1条
水发干贝30g
熟鸡腿肉50g
火腿30g
湖虾仁50g
香菇40g
鲜笋40g
青豌豆30g
籼米飯 400g
盐 適量
料酒 適量

Ingredients

3-4 eggs
1 sea cucumber
Scallops 30g
Cooked chicken leg 50g
Ham 30g
Shrimp 50g
Mushrooms40g
Fresh bamboo shoots 40g
Green pea 30g
Indica rice(well done) 400g
salt (some)
Cooking wine(some)

所有材料準備好以後就可以開始了:
Once all the ingredients are ready, you can start:

1)所有材料切小丁
Dice all ingredients

2)将香菇丁、青豌豆和笋丁先焯水
Blanch diced mushrooms, green peas, and bamboo shoots

3)将锅烧热 并用油滑烫后将海参火腿鸡肉干贝一起下锅炒香菇丁和笋丁黄(料)酒盐 翻炒后盛出,虾仁焯水。
Heat the pot and scald it with oil. Stir fry the sea cucumber, ham, chicken and scallop together. Stir fry the mushroom and bamboo shoot, then stir fry the wine salt and dish it out. Shrimp boiled water.

4)烧热锅,倒入鸡蛋,半成形时加入蒸好的米饭。小火开始慢慢炒制 直至蛋液完美包裹米饭.
Heat the pan, pour in the eggs, and add the steamed rice when it is half-formed. Stir fry slowly over low heat until the egg is wrapped perfectly in Rice.

5)把所有材料倒入一起翻炒,加入適量的鹽,然後上盤。
Stir fry all the ingredients together, add some salt, and serve.
