java rice with shrimp in fresh pineapple bowl is delicious!

 Java rice is fried rice cooked with turmeric and annatto powder ; best paired with grilled or fried meat,shrimp, chicken or fish. It  can be made easily at home. This recipe has only a few and easily accessible ingredients. 

Ingredients (my own version)

3-4 cups cold cooked rice

1 tbsp oil

½ tsp annatto powder

2 shallots peeled and finely chopped

1-1.5  tbsp butter

3 cloves garlic peeled and grated or minced

1 tsp turmeric powder

1 tablespoon soy sauce

Kosher salt and freshly ground pepper to taste


How to cook:

o In a bowl, break rice to separate grains. 

o Heat the pan or skillet then melt the butter.  Add rice and spread it on the cooking pan for about 40-50 seconds or until grains start to sizzle and then toss again .

o Put-in oil, garlic, shallots, soy sauce and salt. Stir until everything is distributed. 

 o Serve with Fried Pork/chicken, shrimp or fish and put it in a fresh pineapple bowl.
