TURKISH DELIGHT - LOKUM

Here in Turkey, It’s called ‘Lokum’ the word itself derived from the Ottoman language. Turkish delight was invented in İstanbul during the 18th century and this delicious desssert quickly became the Sultan’s favorite and It did not take long for local fever to spread across the entire Ottoman Empire.
Next It was Europe’s turn to catch on they gave lokum It’s global name the Turkish delight. So, What is Turkish delight? It’s a type of jelly candy that’s soft, chewy and definitely yummy. It’s main ingredients are really simple sugar, water, starch and lemon juice but out of this simplicity comes a whole range of ripe. In Turkey, you can find so many different local flavors.

Today, I am gonna teach you how to make lokum at home.

INGREDIENTS;
800 gr sugar
120 gr cornflour ( cornstrach)
1 tbsp lemon juice
1 tsp cream of tartar
Juice of three pomegranate

For dusting
160 gr icing sugar ( confectioner’s sugar)
30 gr cornflour ( cornstrach)
Extra icing sugar

Pour ½ cups of water into a big pot, add sugar ( 4 cups). Stir a bit, add the lomon juice and bring to a boil over heat. After 30 minutes, turn off the heat. Transfer 2/3 cups of water to another pot, pour the juice of 3 pomegranates, add a tea spoon of cream of tartar, add 120 gr cornflour and then whisk it for 30 minutes as it keep cooking.
After that, slowly combine two mixes with eachother. After that, cook for another hour, keep whisking non stop boil untill it gets very thick.

Place cookng papers in to a middle size tray, and oil the papers with some cooking oil. Pour all of the mix into the tray. Leave it in room tempature for at least 5 hours before you dust in powder sugar.
Transfer 160 gr icing sugar into a big bowl, add 30 gr cornflour, mix it well. And then dust the delight and dust the counter.

Cut into cubes using a pizza cutter. Transfer the cubes into the bowl with cornstarch and caster sugar. Make sure the caster sugar covers all around the Turkish delight.

İlk fırsatta denemek isterim ama resimdeki gibi olacağından pek emin değilim, yapımı biraz zor gibi duruyor. Şu aralar malum Ramazan bayramı nedeniyle tatlıları fazla fazla yedik, bir süre ara verip yeşilliklere dönmek iyi fikir olabilir. Çok güzel çok değişik lokumlar var. Ben klasik Türk lokumunu severim, bir de çeşidine göre içine fıstık, badem, fındık, kuruyemiş eklenenleri var. Hindistan cevizlisi ve damla sakızlısı da güzel oluyor. Elinize sağlık.

Bence ev yapımı lokum çok zahmetli onun yerine dışardan almak daha mantıklı. Ayrıca dışarda yapılan lokumun kıvamını tutturmak gerçekten zor. Begendigin için teşekkürler 🤗
