TAGALOG:

Ang lugaw ay isa sa mga kilalang pagkain sa Pilipinas tuwing umaga o kung sasapit ang tagulan at taglamig. Ang kadalasang lahok ng lugaw ay ang itlog na syang abot kayang halaga ng mga tao sa probinsya; at ang ibang lahok ay karne ng manok, karne ng baboy. Matatagpuan ang lugaw sa bansang pilipinas sa mga malalapit na karinderya tuwing umaga. At kung sumapit na ang ika-walo ng umaga mula ika-anim, tiyak na wala ka ng dadatnan dahil sa dami ng bumibili at sa napakasarap na lasa nito lalo't mainit at pinigaan ng calamansi.

ENGLISH:

"Lugaw" or rice porridge is very a popular dish in the Philippines. Eaten mostly for breakfast, it is also a well-loved dish during rainy or cold seasons. Lugaw is commonly served with egg, which is affordable especially in the provinces; while the main ingredients are chicken or pork. You will find lugaw being served in most eateries or food joints in the morning. If you come late at around 8.00am, you may end up empty handed since a lot of people really love this especially while it is hot. More delicious if you will add a squeeze of calamansi or lime.

Rice Porridge with Egg - "Lugaw"


MGA SANGKAP - (INGREDIENTS):

  • 1 cup glutinous rice (malagkit)
  • 1 finger ginger (luya)
  • 4 cloves of garlic (bawang)
  • 2 tbs fish sauce (patis)
  • Ground black pepper
  • Water
  • Eggs
  • Tuna (optional)

PAMAMARAAN - (PROCEDURE)

TAGALOG:

1. Hugasan ang isang takal ng malagkit na bigas na nasa kaserola at salinan ng kalahating litro ng mainit na tubig, haluin at muling lagyan ng kalahating litro ng mainit na tubig at takipan.

ENGLISH:

1. In a pot, wash 1 cup of glutinous rice. Add 500 ml of water, cover and let it boil.


TAGALOG:

2. Habang kumukulo ang bigas; alisan ng balat ang luya at gayatin ng piraso at dikdikin hanggang sa ito ay madurog gamit ang matigas na bagay. Isunod gayatin ang bawang ng maliliit at ilagay sa isang maliit na mangkok.

ENGLISH:

2. While waiting for the glutinous rice to boil, prepare the other ingredients. Peel the ginger and slice thinly. Crush and mince the garlic, then set aside.


TAGALOG:

3. Ilagay ang luya sa nilutong bigas at haluin; dagdagan ng kalahating litro ng mainit na tubig at lagyan ng patis kasunod ang durog na tuna (opsyonal). Budburan ng kaunting paminta at ang aking sikreto sa pagluluto ay ang isang kutsarang asukal. Haluin at pakuluan ng 5 minuto at itabi sandali.

ENGLISH:

3. Add the minced garlic into the rice while stirring gently. Add another half liter of hot water then add the fish sauce and tuna (optional). Add a dash of ground black pepper. Here's my little secret – 1 tsp of sugar. Stir and boil for another 5 minutes then set aside.


TAGALOG:

4. Prituhin ang ginayat na bawang sa mainit na kawali na may kaunting mantika. Hintaying magkulay kayumanggi at ahunin sa mainit na mantika at ilagay sa isang maliit na mangkok at itabi.

ENGLISH

4. Heat oil on a pan and saute the minced garlic. Wait until it turns brown then remove from pan and set aside.


"Ang Paglaga ng Itlog" - (Boiling the Egg)


TAGALOG:

5. Magpakulo ng tubig sa kaserola at siguraduhin na kumukulo na ito bago ilagay ang itlog; at kung mailagay na ang itlog, maghintay lamang ng 9 na minuto bago ito ahunin upang maging tama ang luto. Ilagay sa mangko na may tubig at hintaying lumamig bago ito tanggalan ng balat.

ENGLISH

5. Boil water on a pot. Ensure that the water is already boiling before adding the egg. Wait 9 minutes before removing the eggs to ensure that it is rightly cooked. Once cooked, place it in a bowl of water and wait for it to cool before removing the shell.


TAGALOG:

6. At ang pinakahuli, ibalik ang nilutong malagkit na bigas sa stove at pakuluan sandali ng mga 5 minuto at ilagay ng dahan-dahan ang nilagang itlog at budbudran ng piniritong bawang. Handa na ang ating lugaw!

ENGLISH:

6. Put the rice porridge back on fire then carefully add the hard boiled eggs and sprinkle with garlic. Our rice porridge is ready!
